Ingredients
- 2 medium sweet potatoes (cooked and peeled)
- 1.5 scoops chocolate protein powder
– or substitute with 2 tbsp cocoa powder, or use both for extra chocolate flavor - 1 tsp vanilla extract
- ¾ cup milk of choice (almond milk works great)
- 1–2 tbsp date paste (adjust to desired sweetness)
Instructions
- Add the cooked sweet potatoes, protein powder (or cocoa), vanilla, milk, and date paste to a high-speed blender.
- Blend until smooth.
- If the mixture is too thick, add a splash more milk and blend again.
- Refrigerate for at least 30 minutes. It will thicken slightly as it chills due to the protein powder.
- Serve as a fruit dip or enjoy as a chocolate pudding dessert with your favorite topping.
Date Paste
- Add 10 regular dates or 5 Medjool dates to a small bowl.
- Add just enough water to cover the bottom.
- Microwave for about 1 minute, then mash into a paste.
- Store leftovers in the fridge for quick use in other recipes.
