Chocolate Sweet Potato Pudding / Dip

Rich, creamy, and naturally sweetened, this chocolate sweet potato pudding doubles as a nutritious dessert or a delicious fruit dip—made with sweet potatoes, chocolate, vanilla, and date paste.

Ingredients

  • 2 medium sweet potatoes (cooked and peeled)
  • 1.5 scoops chocolate protein powder
    – or substitute with 2 tbsp cocoa powder, or use both for extra chocolate flavor
  • 1 tsp vanilla extract
  • ¾ cup milk of choice (almond milk works great)
  • 1–2 tbsp date paste (adjust to desired sweetness)

Instructions

  1. Add the cooked sweet potatoes, protein powder (or cocoa), vanilla, milk, and date paste to a high-speed blender.
  2. Blend until smooth.
  3. If the mixture is too thick, add a splash more milk and blend again.
  4. Refrigerate for at least 30 minutes. It will thicken slightly as it chills due to the protein powder.
  5. Serve as a fruit dip or enjoy as a chocolate pudding dessert with your favorite topping.

Date Paste

  • Add 10 regular dates or 5 Medjool dates to a small bowl.
  • Add just enough water to cover the bottom.
  • Microwave for about 1 minute, then mash into a paste.
  • Store leftovers in the fridge for quick use in other recipes.
