Mom’s Christmas Recipes: Date Nut Bread & Three Layer Pie

Two beloved Christmas recipes passed down from Coach Susan's mother: a moist, nutty Date Nut Bread and a showstopping Three Layer Pie that's become a family tradition.

Since it is a month from Christmas, I thought I’d give you a few recipes that my mother made every Christmas. They have become a family favorite.

Date Nut Bread

Ingredients

  • 2 cups dates (pitted and chopped)
  • 1 cup sugar
  • 1 Tbsp butter
  • 2¾ cups flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 1 cup nuts (we use pecans, but any nut of your choice)

Instructions

  1. Preheat oven to 350°F.
  2. Pour 1½ cups boiling water over the first 3 ingredients (dates, sugar, and butter) and let stand for ¾ hour.
  3. Mix in the remaining ingredients.
  4. Put mixture into a bread pan.
  5. Bake for 1 hour or until a toothpick comes out clean.

This goes very well with cream cheese and/or peanut butter.


Three Layer Pie

Crust (1st Layer)

  • 1 cup flour
  • 1 stick butter
  • 1 cup chopped pecans

Mix well and press firmly into a 9×13 pan. Bake at 350°F until lightly golden. Allow to cool completely.

2nd Layer

  • 8 oz cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1 large tub of Cool Whip

Mix all together and spread over cooled crust.

3rd Layer

  • 1 small box instant vanilla pudding (one box)
  • 1 small box instant chocolate pudding (one box)
  • 3 cups milk

Mix until thick and spread on top of the second layer.

Topping

  • Cool Whip mixed with 1 Tbsp sugar
  • Grated Hershey bar on top
