Since it is a month from Christmas, I thought I’d give you a few recipes that my mother made every Christmas. They have become a family favorite.
Date Nut Bread
Ingredients
- 2 cups dates (pitted and chopped)
- 1 cup sugar
- 1 Tbsp butter
- 2¾ cups flour
- ¼ tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg
- 1 cup nuts (we use pecans, but any nut of your choice)
Instructions
- Preheat oven to 350°F.
- Pour 1½ cups boiling water over the first 3 ingredients (dates, sugar, and butter) and let stand for ¾ hour.
- Mix in the remaining ingredients.
- Put mixture into a bread pan.
- Bake for 1 hour or until a toothpick comes out clean.
This goes very well with cream cheese and/or peanut butter.
Three Layer Pie
Crust (1st Layer)
- 1 cup flour
- 1 stick butter
- 1 cup chopped pecans
Mix well and press firmly into a 9×13 pan. Bake at 350°F until lightly golden. Allow to cool completely.
2nd Layer
- 8 oz cream cheese (room temperature)
- 1 cup powdered sugar
- 1 large tub of Cool Whip
Mix all together and spread over cooled crust.
3rd Layer
- 1 small box instant vanilla pudding (one box)
- 1 small box instant chocolate pudding (one box)
- 3 cups milk
Mix until thick and spread on top of the second layer.
Topping
- Cool Whip mixed with 1 Tbsp sugar
- Grated Hershey bar on top
